Bringing Back the Salmon Cakes

Salmon cakes weren't a regular thing growing up. We'd have them every once in a while, and I always looked forward to it. Then life happened and I just... stopped making them. I didn't even realize how much I missed them until one day I was grocery shopping and saw cans of salmon on the shelf. Something clicked. I thought, I should just make these myself. So I grabbed two cans and went home with a plan.

I made them last week, a few days before I flew out to New Mexico. And honestly, they turned out surprisingly good. I based mine loosely on this Southern salmon patties recipe, which uses canned salmon, breadcrumbs, egg, onion, and a little lemon juice to hold everything together.

The one hiccup: some of my cakes broke apart into pieces while I was cooking them. Nothing ruined, just not the clean, whole patties I was picturing. I think it's going to take some practice to get the shaping and flipping right without losing pieces along the way.

I wish I had taken a photo before I ate them. Next time, I definitely will.

But the flavor was there, and that's what matters most. This is going back into my regular rotation for sure.

Salmon cakes aren't the only thing on my list, either. I also used to eat potato cakes growing up, and I'm planning to give those a try next.
